Quick definitions of key terms
Both cover mid-market ERP and both can run on-premises or in cloud. The difference is ownership. SAP Business One is proprietary, licensed per user and delivered through SAP's accredited partner ecosystem. ERPNext is GPLv3 with public source, has no licence fee, and can be supported by any capable partner or by your own team.

Adding users costs infrastructure, not licences, which changes the arithmetic for businesses whose staff count grows faster than transaction volume.

Yes. SAP documents deployment on-premises or in cloud, including your own private cloud such as AWS, a partner-run environment, or SAP's own Business One cloud services. On this point the two products are comparable — the difference is licensing rather than deployment.
In practice yes. SAP describes an ecosystem of accredited partners providing consulting and implementation, and partner solutions must be properly licensed by the relevant partner. ERPNext has no accreditation gate, which widens your options and also removes a quality floor.
For most mid-market discrete and process manufacturing we find ERPNext capable — BOMs, routings, subcontracting, batch and serial traceability, quality inspection and costing. For very complex planning or where a specific SAP partner add-on already matches your vertical closely, that gap is real. This is a question to settle with a scripted demo on your own data, not with a feature grid.
With ERPNext the software is GPLv3 and stays with you regardless of your relationship with any partner; you lose support, not the system. With proprietary licensed software your rights depend on your licence and maintenance agreement, and that is worth reading closely before you sign.
We will not quote SAP's pricing here, because it varies by user type, deployment and partner. The structural point is that ERPNext has no per-user licence fee, so its cost sits in implementation, hosting and support. Whether that wins over five years depends on your user count. Yes, and we do this work. Masters, opening balances, open transactions and stock are migrated and reconciled before cutover. The larger effort is redesigning add-ons and customisations, which do not port and have to be rebuilt as ERPNext behaviour.
